Exiting Times in Cary, NC

Ok well not really exciting. Pretty normal routine around here lately. Except for my healthier eating. I'm progressing! I'm making healthier choices every day and have found quite a few new foods that I like that I never had before. I love trying new recipes and making my own up!

I have my first weigh in on Sunday and I am hoping to have lost 3lbs. We'll see. I feel a lot healthier though and despite what the scale says I'll keep moving along! I am determined to get healthier and off of my medicines.

I set two resolutions for myself for 2013

#1- to put $25 from each paycheck into my savings account. So far I am on track, two weeks in!  Putting it there is easy but keeping it there is hard. I am determined though.

#2-to keep my car clean. Anyone who knows me, knows that this is nearly impossible. I practically live out of my car! It's been cold here so I haven't had a chance to clean it out yet but I plan to do so this Sunday. It's going to be 70 here!

Annnnd, that's about it!

I will share one recipe that I really enjoyed!

I used 1 tsp of olive oil and sautéed about 1/2 tablespoon of minced garlic for a minute or two.
Add in 1 can of black beans, rinsed and drained
Add in 1 can of Rotel, whatever heat you like. I like the mild or medium
Add in 1 cup of frozen corn
Add in some onions, chopped. As much as you like!
Cook it all until the ingredients are cooked through

Serve over brown rice with some fat free cheese and fat free sour cream on top!

DELICIOUS!!

You could also add some peppers if you wanted!

It's full of protein from the beans but here is no meat! I highly recommend you try it!

Ready, Set, GO!!!!

On todays list of things to do...

Pick up prescriptions..hopefully as the weight goes down these will go away. I sure do hate taking 6 pills a day!

Cancel gym membership.. seems counter productive I know. But I never use it. Ever! I like to exercise at home. Leslie Sansone walk it off videos are my favorite! I also have some light weight kettle bells I use and nothing beats good old fashioned walking. It's good for me and good for my dogs!

Grocery shopping. I've pulled all of the non-power food items from my cabinets and will take them to my brothers house this weekend! My list is long and it's going to cost me a lot of money but most of it is staples to get my pantry stocked up. Lots of lean mean, veggies and fruits! Good thing I'm starting to eat more veggies. I used to be a corn and green bean only girl. I've discovered in the last few years that I like mushrooms, zucchini, broccoli, cauliflower and even spinach! (don't have a heart attack mom!)

I've got my plan of attack for snacks all set! I crave crunchy and thankfully weight watchers has some great crunchy snacks I can have at only 2 points per serving! Oh, and light microwave popcorn is on my list of power foods! WHOOP!!!

I've downloaded the WW app to my iphone so I can scan things at the store to find out if they are a power food. Since I'm just starting, this will help a lot I hope!

Here we go!!!!

This blog will be a myriad of things. My weight loss journey, my cooking experiences, my crafting and sewing and then just a little bit of me! Follow along if you want!

Today is the first day of my Weight Watchers Journey! I am excited and scared to death! I'm down 70lbs from my heaviest but I have a long way to go. I'll go every Sunday to weigh in. The accountability is important to me! I need someone to celebrate with me and help me when I'm struggling!

So here we go! My first goal is to lose 30lbs! This will put me at 100lbs lost. I want to reach this goal before April 8th!
